Why it works: Parsley and celery match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,810 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Roast Pig
Ingredients
Directions
Prepare
Prepare the dressing for fowls by adding half an onion, chopped fine, and set it aside.
Wash the pig thoroughly inside and outside.
Rinse the inside of the pig with water mixed with baking soda.
Wipe the pig dry with a fresh towel.
Salt the inside of the pig.
Stuff the pig with the prepared dressing.
Sew the pig up.
Place the pig in a kneeling posture in a dripping pan.
Tie the pig's legs in position.
Pour a little hot salted water into the dripping pan.
Roast
Baste the pig with butter and water as it warms.
When the pig begins to smoke, rub it often with a rag dipped in melted butter to keep the skin crisp.
Roast the pig for 2 to 3 hours, basting occasionally.
Make the gravy
Skim off most of the grease from the drippings.
Stir in flour.
Add water to achieve the right consistency.
Season the gravy with pepper.
Let the gravy boil once.
Strain the gravy.
Add wine if desired.
Serve and carve
Serve the pig on a large, hot platter, garnished with parsley or celery tops, a green wreath around the neck, and a sprig of celery in its mouth.
Cut off the pig's head first.
Split down the back.
Remove the hams and shoulders.
Separate the ribs.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Butter
- Fat that browns and crisps the skin while keeping the surface moist as it roasts.
- Flour
- Thickens the drippings into a smooth gravy as it cooks with the liquid.
- Onion
- Adds savory aroma and flavor to the dressing that is stuffed into the pig.
- Wine
- Adds acidity and depth of flavor to the gravy.
The step that matters
Rubbing the skin with melted butter once it starts to smoke. Fat and frequent basting keep the skin from drying out, which helps it brown and turn crisp. If the skin dries or is left unbasted, it tends to turn tough and leathery instead of crackling.
Swap the onion
