What each ingredient does

Cauliflower
Is the main vegetable that becomes crisp-tender and absorbs the pickling liquid.
Vinegar
Provides the acidity that preserves and sharpens the flavor of the pickle.
White sugar
Balances the sharp acidity of the vinegar with sweetness.
French mustard
Adds sharp, tangy flavor and helps emulsify the pickling liquid.
White mustard seeds
Contribute a mild, pungent aroma and flavor to the pickling liquid.

The step that matters

Boiling the cauliflower for 10 to 15 minutes. Boiling softens the cauliflower enough to absorb the brine but overcooking makes it mushy. Cooling and draining it before jarring prevents watering down the vinegar and keeps the florets firm.

Swap the cauliflower
