Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the soft mashed body that is shaped into the puffs and sets as they cook.
Butter
Adds richness and flavor and keeps the puffs from sticking to the baking sheet.
Egg
Brushed on top to help the puffs brown and give them a glossy finish.

The step that matters

Shape the potatoes while hot. Warm mashed potato is soft and pliable, so it forms smooth balls easily. As it cools, the starch firms up and becomes stiff and crumbly, making the balls hard to shape and less tender.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg, parsley):

  1. Shallotfits better
  2. Chivefits better
  3. Leekfits about as well
  4. Potatothe original

Fit is the average pairing score against butter, egg, parsley. Candidates are from the same food group and used in at least 100 recipes.
