Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the sauce and sets the body once thickened with flour.
Flour
Thickens the cream and milk into a smooth sauce as its starch cooks.
Egg
Enriches and thickens the sauce slightly when stirred in off the heat.
Rich cream
Adds fat and richness, giving the sauce a smooth, velvety texture.
Butter
Adds fat and rich flavour to the sauce.

The step that matters

Stir in the beaten egg off the heat. If the egg meets very hot liquid while the sauce is still boiling, it can scramble and become grainy. Removing the pan from heat first lets the egg thicken the sauce gently and smoothly.
