What each ingredient does

Sirloin steak
Provides the meat that forms the body of the patties once finely chopped.
Butter
Fat for frying that promotes browning on the surface of the patties.
Onion juice
Adds savory onion flavor to the mixed meat.

The step that matters

Moisten your hands with cold water before shaping. Wet hands keep the raw meat from sticking to your palms so the cakes keep their round shape and smooth surface. Cold water also keeps the chopped meat from warming and softening while you shape it.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
