Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold boiled potatoes
Form the bulk of the dish and absorb the warm milk as they bake.
Milk
Provides moisture and softens the potatoes as they cook in the dish.
Butter
Adds richness and fat that helps the top brown when uncovered.
Flour
Thickens the warm milk so it binds around the potatoes.

The step that matters

Uncovering to brown. Baking covered traps steam and keeps the surface pale. Uncovering for the final stage lets moisture escape and the surface brown through dry heat, so the top should be checked as it browns.

Swap the potato

How well each one fits the dish's main ingredients (milk, pepper, butter, flour):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Chivefits less well
  4. Shallotfits less well

Fit is the average pairing score against milk, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
