What each ingredient does

Potatoes
Form the smooth mashed base that holds the fish sauce and gives the dish its body.
Milk
Adds moisture and richness to the mashed potatoes and forms the body of the sauce.
Butter
Adds fat and richness to both the potato mash and the sauce.
Flour
Thickens the milk into a smooth sauce as it cooks with the butter.
Cooked salt codfish
Provides the savory, salty flavor that defines the dish.

The step that matters

Stir the flour mixture into the boiling milk. Flour clumps if added dry or to cool liquid. Blending it with butter and hot milk first and then stirring it into boiling milk lets the starch disperse and thicken the sauce smoothly.

Swap the onion

How well each one fits the dish's main ingredients (potato, milk, butter, pepper, flour):

  1. Chivefits better
