Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Mash the potatoes very fine.

  2. Add melted butter, warm milk, salt, and sugar.

  3. Dissolve the yeast in warm water and mix into the potato mixture.

  4. Sift in flour until you achieve a moderately stiff batter.

  5. Mix well and set aside to rise.

Bake

  1. Once light, pour into pans and let rise again.

  2. Bake in a slow oven at 300°F (150°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add starch and moisture, giving the bread a soft, tender crumb.
Butter
Adds fat that softens the crumb and enriches the flavor.
Milk
Provides liquid and milk sugars that help the crust brown during baking.
Yeast
Produces gas as it ferments, making the dough rise and become light.
Flour
Provides gluten and starch that give the batter structure as it sets.

The step that matters

Let the dough rise until light before panning. Yeast gas must build up enough to lighten the batter. Pouring it into pans too early leaves a dense loaf, while letting it rise fully gives the bread its airy texture.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, sugar, flour):

  1. Arrowrootfits about as well
  2. Sweet potatofits about as well
  3. Potatothe original
  4. Leekfits about as well

Fit is the average pairing score against butter, milk, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
