Ingredients

Directions

Make the gelatin base

  1. Soak the gelatin in ½ cup of water for 30 minutes.

  2. Heat the soaked gelatin over hot water until melted.

  3. Add sugar, orange juice, and lemon juice to the melted gelatin; stir until the sugar dissolves.

  4. Let the mixture cool while preparing the bananas.

Add the bananas and eggs

  1. Peel the bananas and press them through a sieve to obtain 2 cups of pulp.

  2. Add the banana pulp to the gelatin mixture and place it on ice until partly congealed.

  3. Beat the egg whites until very stiff and fold them into the banana mixture until it holds its shape.

  4. Serve with whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the mixture so it holds its shape as a light, sliceable dessert.
Egg whites
Whipped into foam, they create the airy, sponge-like lightness of the cake.
Bananas
Provide the main flavour and body through their pulp, which thickens the mixture.
Sugar
Sweetens the dessert and dissolves into the gelatin base before setting.

The step that matters

Folding the beaten egg whites into the banana mixture. Overbeating or deflating the whites makes the foam collapse, so the cake loses its airy structure. Fold gently and stop once the mixture holds its shape, while it is only partly set.

Swap the banana

How well each one fits the dish's main ingredients (egg, sugar, gelatin, orange, lemon, cream):

  1. Vanillafits better
  2. Raspberryfits better
  3. Figfits better
  4. Bananathe original

Fit is the average pairing score against egg, sugar, gelatin, orange, lemon, cream. Candidates are from the same food group and used in at least 100 recipes.
