Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the cream so it holds its shape when turned out.
Cream
Provides the rich fat and body that makes the set dessert light yet creamy.
Lemon juice
Adds acidity that brightens the sweet, rich cream.
Sugar
Sweetens the cream and balances the acidity of the lemon juice.

The step that matters

Cool the isinglass before adding it to the cream. Hot isinglass added to cold cream can clump or thin the mixture and weaken the set. Cooling it first lets it blend smoothly so the dessert firms evenly in the refrigerator.

Swap the lemon
