Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the filling and whites whip into the meringue topping.
Cornstarch
Thickens the lemon filling as it heats with the boiling water.
Sugar
Sweetens the filling and stabilises the whipped egg white meringue.
Lemon juice and rind
Provides the sour, aromatic flavour that balances the sweetness.

The step that matters

Adding the boiling water to the filling. Cornstarch only thickens fully when it is heated and stirred with the liquid, so the filling must be cooked through rather than just mixed; otherwise it stays thin.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
