Why it works: Rhubarb and lemon match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 546 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓
Rhubarb Cream
Ingredients
Directions
Prepare the rhubarb
Place the rhubarb in a saucepan and add enough water to cover it.
Stew until it becomes a pulp.
Set the cream
Dissolve the gelatine in a small amount of hot water, then add it to the rhubarb pulp.
Stir in the sugar and add the lemon rind or juice.
Rinse a mold with cold water, pour in the rhubarb mixture, and let it firm up.
Serve
Turn out the rhubarb cream onto a glass dish and serve with boiled custard around it.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rhubarb
- Provides the tart flavor and, once stewed, the pulp that forms the body of the cream.
- Gelatine
- Sets the pulp so it holds its shape when turned out of the mold.
- Sugar
- Sweetens the tart rhubarb and balances its acidity.
The step that matters
Dissolving the gelatine. Gelatine must be fully dissolved in hot water before it is added to the pulp; undissolved granules leave specks and weak patches, and it sets properly only when evenly distributed.
Swap the rhubarb
How well each one fits the dish's main ingredients (sugar, lemon):
- Cinnamonfits better
- Gingerfits better
- Marjoramfits better

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
