Why it works: Peach and sugar are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 2,308 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

What each ingredient does
- Peaches
- The fruit itself; it softens when heated and becomes tender in the hot syrup.
- Sugar
- Adds sweetness and, dissolved in the syrup, helps preserve the fruit.
The step that matters
Dropping the peaches into the boiling syrup. Heating the fruit through drives out air trapped in the flesh and lets the syrup penetrate evenly. Peaches left cold at the center stay firm and may not be properly preserved.
