Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add moisture and starch that keep the crumb soft and moist.
Flour
Forms gluten, the stretchy network that gives the bread its structure and holds the rise.
Sugar
Feeds the yeast so the dough ferments and rises, and adds a little browning.
Olive oil or butter
Adds fat that tenderizes the crumb and softens the crust.

The step that matters

Let the sponge stand until light. Yeast ferments the sugars in the sponge and releases gas that makes the dough rise. The sponge must be thick enough to trap that gas, so a thin sponge will not rise well.

Swap the potato

How well each one fits the dish's main ingredients (sugar, olive, flour):

  1. Arrowrootfits better
  2. Eggplantfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, olive, flour. Candidates are from the same food group and used in at least 100 recipes.
