Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly structure as it cools.
Egg whites
Beaten into the mixture to lighten its texture.
Sugar
Sweetens the pudding and balances the sharpness of the lemon.
Lemon juice
Adds acidity that brightens the flavour.

The step that matters

Beating in the egg whites. The mixture must be partly thickened but still pourable. If it is too warm, the whites will not blend evenly; if it has set too far, lumps of gelatine will remain and the texture will be grainy rather than smooth and light.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
