Raised Pie, with a Neat’s Tongue
Ingredients
Directions
The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.
Shape a pie to resemble a tongue.
Place hot force-meat at the bottom.
Cut the boiled tongue into thin slices and arrange around the pie.
Cover with sheets of bacon and seal the pie.
Bake in a moderate oven (350°F / 175°C) for about an hour.
Once done, cut the top off, pour off the fat, and serve.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
