Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks and gives the pudding its soft, chewy body.
Egg
Adds richness and helps bind the pudding so it holds its shape.
Milk
Hydrates the tapioca during steeping and forms the main liquid of the pudding.
Sugar
Sweetens the pudding and adds flavour.

The step that matters

Steeping the tapioca in boiling milk. Tapioca starch must be fully hydrated and heated to swell and thicken. Letting it steep covered for the full 10 minutes allows the grains to soften before cooking, which helps prevent a gritty or uneven texture.
