Deviled Biscuits, &C

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Crack the lobster claws and remove the meat.

  2. For sandwiches, beat the meat with mace, white pepper, cayenne, nutmeg, and salt in a mortar.

  3. For a cold relish, mix the meat with coral and spawn in layers for a marbled appearance.

  4. Press the layers into a potting can and cover with butter.

  5. Bake in a slow oven at 300°F (150°C) for about 30 minutes.

  6. Once cooled, remove the butter, pack the meat in small potting cans, and pour clarified butter over it.

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
