Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the filling as it cooks into a smooth, stable paste.
Egg yolk
Adds richness and helps thicken the filling as it cooks.
Sugar
Sweetens the filling and helps give it body.
Butter
Adds fat for a smoother, richer texture.

The step that matters

Slowly stir in the flour mixture. Adding the starch paste slowly into hot liquid, while stirring, keeps it from clumping so the filling cooks smooth and clear.
