Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. In a mortar, combine chopped chicken, pork, and pepper; pound until mixed. Add chopped truffles and mix well.

  2. Open oysters carefully, making a small opening, and fill each with the mixture.

Coat and fry

  1. Coat filled oysters in flour, then dip in beaten egg.

  2. Fry oysters in boiling fat until golden brown.

  3. Drain on a cloth and keep warm in a 300°F (150°C) oven.

Serve

  1. Sprinkle with coarse sea salt and serve on toast.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Serve as the main filled shell, cooking through while the outside fries golden.
Chicken breast
Adds body and a firm, meaty texture to the filling.
Raw fat salt pork
Adds fat and moisture, keeping the filling juicy as it cooks.
Truffles
Provide the earthy, aromatic flavour that defines the dish.
Egg
Binds the flour coating so it sets and browns when fried.

The step that matters

Fry oysters in boiling fat until golden brown. The fat must be hot enough to brown the egg and flour coating quickly. If it is too cool, the coating soaks up oil and turns greasy before it crisps, and the oyster overcooks inside.
