What each ingredient does

Potatoes
Provide the starchy flesh that becomes fluffy when mashed and forms the filling.
Butter
Adds fat and richness, coating the mashed potato and softening its flavour and texture.

The step that matters

Bake the potatoes until soft. Potato starch swells and softens fully only when the flesh is cooked through. Underbaked potatoes stay firm and dense, so they will not mash into a fluffy filling.
