What each ingredient does

Semolina
Thickens the stock as it boils, giving the soup body.
Milk or cream
Adds richness and a softer, creamier texture to the soup.
Egg yolk
Enriches and thickens the milk, adding richness and body to the soup.

The step that matters

Sprinkling in the semolina. Semolina added to hot stock can clump if dropped in all at once. Sprinkling it in slowly while stirring lets each grain hydrate and thicken the soup evenly.
