Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Remove the centers from the tomatoes.

  3. Chop the cooked meat into very small pieces.

Stuff and bake

  1. In a bowl, mix the meat with bread crumbs, parsley, shallot, pepper, salt, and egg.

  2. Stuff the mixture into the hollowed tomatoes.

  3. Place a small piece of butter on top of each tomato.

  4. Bake for 15 minutes.

What each ingredient does

Tomatoes
Serve as the hollow shell that holds the filling while it bakes.
Cooked white meat
Supplies the main body of the filling.
Egg
Binds the filling so it holds its shape when baked.
Bread crumbs
Absorb moisture and help give the filling a firmer, less runny texture.
Butter
Adds fat and richness, and helps the top brown and flavor the tomato.
