What each ingredient does

Cold game
Forms the main body of the filling, giving it its meaty texture and flavor.
Aspic jelly
Sets with cooling to hold the mold together and give a clear, firm structure.
Chaud-froid sauce
Coats the mold as a thick, glossy layer that sets and shapes the outside of the dish.
Port
Adds sweetness and depth of flavor to the game filling.
Currant jelly
Adds fruity sweetness and a gel that helps the filling set.

The step that matters

Let the aspic border set fully before lining the mold. Aspic is a gelatin-based liquid that only holds its shape once fully chilled and firm. If the border is added before it sets, or the next layer is poured on too soon, the layers will smear and the unmolded shape will collapse.

Swap the currant

How well each one fits the dish's main ingredients (truffle, sauce, sherry, sugar):

Fit is the average pairing score against truffle, sauce, sherry, sugar. Candidates are from the same food group and used in at least 100 recipes.
