Puff Pastry

Ingredients

Directions

  1. Sift the flour onto a clean surface.

  2. In a bowl, mix the egg yolk, lemon juice, and cold water.

  3. Combine this mixture with the flour to form a dough similar in consistency to the butter.

  4. Roll the dough out to about 1 foot in length.

  5. Place the butter in the center of the dough, fold the ends over, and turn the pastry.

  6. Roll it out thinly, then fold it into thirds.

  7. Chill the pastry in a cool place for at least 10 minutes.

  8. Repeat the rolling and chilling process a total of seven times after adding the butter.
