What each ingredient does

Aspic jelly
Sets into a firm, clear gel that holds the molded shape.
Shrimps
Provides the main filling, adding delicate sweet seafood flavor.
Green butter
Adds richness and herb flavor, and carries flavor through the gel.
Mayonnaise sauce
Adds fat and creaminess to the base in each paper case.
Garden cress
Adds a peppery, fresh aroma and a sharp green bite.

The step that matters

Let the molds set fully before turning out. Aspic is a gelatin-based jelly that firms as it cools. If it is not fully set, the molds can slump or tear when turned out, so the shape and clear surface are lost.

Swap the garden cress

How well each one fits the dish's main ingredients (butter, shrimp, sauce):

  1. Capersfits better
  2. Garlicfits better
  3. Parsleyfits better
