Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Mince the white meat and ham.

  3. Mix the minced meat with bread crumbs, chopped onion, egg, parsley, pepper, and salt.

  4. Cut a slice from the top of each tomato and scoop out the seeds.

Fill and bake

  1. Fill each tomato with the meat mixture.

  2. Place a small piece of butter on top of each filled tomato.

  3. Bake for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the hollow shell that holds the filling while it bakes.
Egg
Binds the meat mixture so it holds its shape when baked.
Bread crumbs
Absorb moisture from the filling and help it hold together.
White meat
Provides the main body and texture of the filling.
Fat ham or bacon
Adds fat and savory flavor that keeps the filling moist.

The step that matters

Scoop out the seeds and fill the tomatoes. Removing seeds and excess juice leaves room for the filling and keeps the tomato shell from releasing liquid that would make the filling soggy as it bakes.
