Frosted Apple Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Steam and sift the apples.

  2. In a bowl, combine the apple puree with the yolks of 2 eggs, sugar to taste, and a few drops of lemon extract.

  3. Pour the mixture into a pie crust and bake at 350°F (175°C) until set.

Frost and finish

  1. Once the pie is baked and partially cool, beat the whites of 2 eggs with a little sugar until frothy.

  2. Spread the egg white mixture over the pie and return it to the oven to brown slightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the main body and moisture of the filling as a puree.
Egg yolks
Thicken the apple puree as it bakes, helping it set.
Egg whites
Whip into a foam that forms the frosting and browns in the oven.
Sugar
Sweetens the filling and the frosting.

The step that matters

Returning the frosted pie to the oven. Egg white meringue browns quickly and can scorch, so the pie needs watching for only a slight browning. Frothy whites should be beaten before spreading so the topping holds its shape.

Swap the apple

How well each one fits the dish's main ingredients (egg, sugar, lemon):

  1. Orangefits better
  2. Vanillafits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
