Why it works: Cream and gelatin match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

Peach Tapioca

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the peaches

  1. Drain the can of peaches.

  2. Sprinkle the peaches with powdered sugar and let stand for one hour.

  3. Add enough water to the syrup to make 3 cups.

Make the tapioca

  1. Boil the mixture.

  2. Add 1½ cups pearl tapioca, 2 tablespoons sugar, and ¼ teaspoon salt.

  3. Cook until the tapioca is transparent.

Bake and serve

  1. Line a mold with the peach sections.

  2. Pour the tapioca mixture into the mold.

  3. Bake in a pan of hot water at 400°F (200°C) for thirty minutes.

  4. Cool the dessert.

  5. Serve with sweetened and flavored whipped cream.

  6. If desired, add 2 tablespoons of gelatin when serving cold to help it keep its shape.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl tapioca
Starch that thickens as it cooks and sets the dessert's body.
Peaches
Provide fruit flavor and sweetness, and line the mold as the visible surface.
Gelatin
Optional setting agent that helps the dessert hold its shape when served cold.

The step that matters

Cook until the tapioca is transparent. Pearl tapioca must be cooked fully until the starch granules swell and turn clear; undercooked tapioca stays chalky and firm at the center and thickens unevenly.

Swap the peach

How well each one fits the dish's main ingredients (sugar, cream, gelatin):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits about as well
  4. Peachthe original

Fit is the average pairing score against sugar, cream, gelatin. Candidates are from the same food group and used in at least 100 recipes.
