What each ingredient does

Hot mashed potatoes
Form the main body of the balls and give a soft, tender interior.
Butter
Adds fat for richness and a softer texture in the mixture.
Cream
Adds moisture so the mixture holds together and stays tender.
Egg
Binds the mixture and, brushed on top, promotes golden browning.

The step that matters

Shape and brush with egg. The mixture must be smooth and firm enough to hold its shape, and the egg brushed on top browns the surface. Uneven shaping or thin egg coverage can lead to cracks or pale spots.
