Stuffed Potatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Bake the potatoes at 400°F (200°C) until tender.

  2. Cut a piece of skin from the flat side of each potato.

  3. Remove the insides and mash them.

  4. Mix the mashed potato with the chopped meat (if using), butter, salt, and pepper.

  5. Fill the potato skins with the mixture, rounding them full.

  6. Return the stuffed potatoes to the oven to brown.
