Peach Tapioca

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the peaches

  1. Drain the can of peaches.

  2. Sprinkle the peaches with powdered sugar.

  3. Let the peaches stand for one hour.

  4. Add enough water to the syrup to make 3 cups.

Make the tapioca

  1. Boil the mixture.

  2. Add the tapioca, sugar, and salt.

  3. Cook until the tapioca is transparent.

Bake and serve

  1. Line a mold with the peach sections.

  2. Pour the tapioca mixture into the mold.

  3. Bake in a pan of hot water at 400°F (200°C) for thirty minutes.

  4. Cool and serve with sweetened and flavored whipped cream.

What each ingredient does

Pearl tapioca
Starch that swells and thickens as it cooks, then sets into a soft, sliceable body as it cools.
Peaches
Provide the main fruit flavor and moisture, and line the mold for the finished dessert.
Sugar
Adds sweetness and balances the tart edge of the fruit and syrup.

The step that matters

Cook until the tapioca is transparent. Tapioca pearls must fully hydrate and gelatinize to turn clear. Undercooked pearls stay chalky and firm at the center, so the set custard will have a raw, gritty texture.
