Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and give the cake a tender crumb.
Eggs
Yolks enrich the batter and whites, beaten in, add lift and structure.
All-purpose flour
Provides the main structure that sets the cake as it bakes.
Baking soda
Reacts with the acidic lemon juice to produce gas that helps the cake rise.
Lemons
Juice and peel add acidity and bright lemon aroma.

The step that matters

Bake immediately after mixing. Baking soda starts releasing gas as soon as it meets the acidic lemon juice, so the batter should go into the pan and the oven right away to keep that lift in the cake.
