What each ingredient does

Trout
Is the main protein, cooked gently in salted water so it stays moist and flakes.
Coarse sea salt
Seasons the poaching water so the fish is lightly seasoned as it cooks.

The step that matters

Simmer for no longer than 30 minutes. Fish proteins set and toughen when overcooked, becoming dry and firm. Keeping the simmer gentle and the time short keeps the flesh moist and tender.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (clove, vinegar, parsley):

  1. Shallotfits better
  2. Carrotfits better
  3. Mustardfits better
  4. Onionthe original

Fit is the average pairing score against clove, vinegar, parsley. Candidates are from the same food group and used in at least 100 recipes.
