Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Forms the main body of the shell and gives a soft, tender interior.
Egg yolks
Add richness and fat, helping the potato mixture hold together.
Flour
Dries the surface so the mixture is easier to handle and roll.
Egg
Acts as a sticky layer that helps the cracker dust adhere.
Cracker dust
Forms a crisp, golden coating that browns during frying.
Hot lard
Conducts heat quickly, crisping the coating and browning the outside.

The step that matters

Fry in hot lard for a short time. Frying in hot fat sets the crumb coating quickly and browns it before the potato interior dries out. Too low a temperature lets oil soak in and makes the shells greasy, while overlong frying dries and toughens them.

Swap the potato

How well each one fits the dish's main ingredients (egg, flour):

  1. Arrowrootfits better
  2. Chivefits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against egg, flour. Candidates are from the same food group and used in at least 100 recipes.
