What each ingredient does

Gherkins
The main vegetable, whose firm texture is kept through salting and repeated hot vinegar pours.
Coarse sea salt
Draws moisture out of the gherkins and helps firm their texture before pickling.
Vinegar
Provides the acidity that sharpens flavour and keeps the pickle preserved.
Cloves
Adds warm, aromatic spice to the pickling liquid.
Jamaica peppercorns
Adds aromatic, pungent spice that flavours the pickling vinegar.
Mace
Adds a delicate, aromatic warmth to the pickling liquid.

The step that matters

Jar the gherkins only once cold. Hot vinegar and gherkins left warm can soften the texture and build pressure in sealed jars. Letting them cool fully keeps the crunch and keeps the jars safe to store.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (vinegar, clove):

  1. Allspicebetter flavor fit
  2. Cinnamonbetter flavor fit
  3. Tarragonbetter flavor fit
  4. Macethe original

Fit is the average pairing score against vinegar, clove. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
