What each ingredient does

Celery
Forms the body of the soup and gives its main flavour as it softens and releases its juices.
Celery seed
Adds a concentrated celery aroma to the finished soup.

The step that matters

Skim off any scum that rises during cooking. Scum is coagulated protein and impurities that rise to the surface as the soup simmers. Removing it keeps the broth clear and free of bitter or off flavours.
