Ingredients

Directions

  1. Cut the hare into pieces, separating the legs and shoulders.

  2. Combine the trimmings and any leftover meat with ½ pint of water and 1 tablespoon of currant jelly in a clean stew pan.

  3. Boil gently for 15 minutes, then strain the mixture into a basin.

  4. Return the liquid to the stew pan, flour the hare pieces, and add them to the gravy.

  5. Simmer gently until the hare is tender, about 20 minutes.

  6. Slice the stuffing and warm it in the gravy for about 5 minutes before serving.

  7. Divide the head and place one half on each side of the dish.
