Oven, in the book's wordsA brisk oven

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a round-bottomed frying pan, break the eggs and add the sifted sugar and grated lemon peel.

  2. Heat the pan over a very low fire, whisking until warm but not hot enough to cook the eggs.

  3. Remove the pan from the heat and whisk until cool, about 15 minutes.

  4. Lightly stir in the flour with a spatula.

  5. Prepare the sponge frames by wiping them with a clean cloth and brushing the insides with clarified butter, then dust with loaf sugar.

  6. Fill the frames with the mixture and sprinkle pounded sugar on top.

  7. Bake in a brisk oven at 400°F (200°C) for 15 minutes.

  8. Once done, remove from the frames and let cool.
