Fried Eggs and Minced Ham or Bacon
Ingredients
Directions
Cut the bacon into thin slices and then into small square pieces.
Place the bacon in a stew-pan over gentle heat until some fat is melted.
Transfer the melted bacon to a warm dish.
In the same stew-pan, add a ladleful of melted bacon or lard and heat.
Add about a dozen small pieces of bacon, then crack an egg into the pan.
Cook carefully until the egg is round and the bacon pieces stick to it.
Ensure the yolk does not harden, then place the egg on a warm dish and repeat with the remaining eggs.
