Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Prepare a sponge with flour, sugar, milk, and yeast as in the previous recipe.

  2. Once the sponge has rested, mix in the softened butter, currants, candied lemon and orange peel, nutmeg, allspice, and cinnamon.

  3. Grease a hoop and pour the mixture into it.

  4. Bake in a preheated oven at 350°F (175°C) for 1.5 hours.

Finish

  1. Optionally, ice and decorate as a Twelfth Cake.
