Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat your oven to 400°F (200°C).

  2. In a bowl, rub together the flour, sugar, ginger, cayenne, butter, tartaric acid, and cream of tartar until well mixed.

  3. Dissolve the carbonate of soda in the warm milk and stir it into the mixture quickly.

  4. Knead the mixture to form a firm dough.

  5. Roll out the dough to ¼ inch thick and cut it into strips 2 inches wide, then cut those into biscuits 3 inches long.

  6. Bake the biscuits in the preheated oven until they are pale brown and crisp.
