Why it works: Thyme and marjoram match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,225 recipes. Both carry terpineol, which smells pine, woody. The science ↓
Turtle Soup
Ingredients
Directions
Prepare the turtle
Clean the turtle thoroughly and place it in a kettle. Cover with cold water and bring to a boil, skimming as necessary.
Tie thyme, marjoram, and sweet basil in a small bag. Add the bag to the kettle and boil with the meat slowly for 20 minutes.
Simmer and finish
Transfer the kettle to low heat and simmer for 5–6 hours.
Remove the meat from the bones, dice it when cool, and return it to the stock.
Season with salt and pepper to taste.
Brown flour in the oven, blend it with butter, and thicken the soup to a creamy consistency.

What each ingredient does
- Turtle
- Provides the meat that becomes the main body of the soup.
- Butter
- Blended with browned flour to form a roux that thickens the soup.
- Flour
- Browned and blended with butter to thicken the soup to a creamy texture.
The step that matters
Simmer slowly on low heat. Long, gentle simmering breaks down the tough connective tissue of the turtle meat. Boiling hard can toughen the meat and cloud the stock.
Swap the basil
How well each one fits the dish's main ingredients (thyme, marjoram, pepper, flour, butter):
- Sagefits better
- Winter savoryfits better
- Parsleyfits better

Fit is the average pairing score against thyme, marjoram, pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
