What each ingredient does

Oysters
Provide the main flavour and moisture of the filling.
Boiled veal
Adds body and bulk so the filling holds its shape.
Egg yolks
Bind the filling and enrich it, helping it set when cooked.
Cracker crumbs
Absorb moisture and form a crisp, browned outer coating.
Soft butter
Adds richness and a smoother texture to the filling.

The step that matters

Fry the croquettes quickly in hot oil. Hot oil browns and crisps the crumb coating quickly, before the soft filling overheats or leaks out. Slow frying lets the oil soak in and makes the croquettes greasy.
