Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whipped cream
Whipped air and fat give the dessert its light, creamy body.
Isinglass
Dissolved gelatin-like protein sets the mixture into a firm, sliceable form when chilled.
Sugar
Adds sweetness and balances the tartness of the lemon.
Lemon peel
Adds aroma and a bright citrus flavour from its oils.

The step that matters

Add the dissolved isinglass mixture and beat until very light. Isinglass must be fully dissolved in hot water before it is added, otherwise it can form lumps or streaks. Beating the mixture gently while adding it helps distribute the setting agent evenly, so the cream sets smooth and light rather than dense or uneven.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Lemonthe original

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
