The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Lemon and sugar barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable gel as it cools.
Orange juice
Provides the main flavour and acidity, balancing the sugar.
Lemon juice
Adds sharp acidity that brightens the orange flavour.
Egg whites
Whipped to a foam, they lighten the texture of the set gelatine.

The step that matters

Fold the egg whites in gently. Whipped egg whites trap air in a fragile foam. Folding gently, rather than stirring, keeps the air bubbles so the set gelatine stays light. If the gelatine is too hot, it can deflate the foam; if it has partly set and is too stiff, the whites will not blend evenly.

Swap the orange

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
