Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Cut the apples in half without peeling and remove the core.

  3. Stick three cloves into each apple half.

  4. Place the apples in a greased baking dish.

Bake and serve

  1. Sprinkle sugar and grated nutmeg over the apples, add dots of butter, and a little water.

  2. Bake for about 30 minutes and serve in the baking dish.

What each ingredient does

Sweet apples
Provide the main body of the dish, softening as they bake into a tender fruit base.
Sugar
Adds sweetness and helps the apple surfaces brown slightly as they bake.
Butter
Adds fat and richness, helping the apples taste rounder and coat the pan juices.
Cloves
Contribute a warm, aromatic spice flavour that infuses the apple halves.
