Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam, they give the dessert its light, airy structure.
Heavy cream
Whipped to stiff peaks, it adds richness and a creamy, airy body.
Strawberries or red raspberries
Pureed, they supply fruit flavor, moisture and tartness to the mixture.
Sugar
Sweetens the fruit purée and balances its acidity.
Lemon juice
Adds acidity that brightens the fruit flavor and balances the sweetness.

The step that matters

Fold in the whipped components gently. Folding keeps the air trapped in the whipped cream and egg whites. Vigorous stirring deflates them, leaving a dense, flat dessert instead of a light, sponge-like one.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream, egg, vanilla):

  1. Strawberryfits better
  2. Raspberryfits better
  3. Figfits better
  4. Lemonthe original
