  1. Melt the butter in a saucepan.

  2. Stir in the flour and add the heated cream.

  3. Stir until smooth.

  4. Add the chopped chicken and mash the yolks of the hard boiled eggs with the sherry.

  5. Mix in the yolk mixture and stir in the egg whites cut into small pieces.

  6. Season with salt and red pepper to taste.

  7. Serve very hot.
