Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the filling

  1. Cream the butter, sugar, and egg yolks together in a bowl.

  2. Whip the egg whites until stiff and fold them into the mixture.

  3. Soak the lemon rinds in the water, then strain the mixture.

  4. Add the lemon juice to the strained water and gradually stir it into the egg mixture.

Bake

  1. Pour the filling into a prepared pie crust and bake until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks add richness and, once heated, set the filling to a firm custard.
Sugar
Adds sweetness and balances the sharp lemon flavor.
Butter
Adds fat for richness and a smooth, tender texture.
Lemons
Juice provides acidity and zest provides bright aroma.

The step that matters

Folding in the whipped egg whites. Whipped whites trap air that gives the filling lift and a light texture. Folding gently keeps that air in, while vigorous stirring deflates it and leaves a denser pie.
